I have taken jobs i was wayyy over-qualified to do. It's hard now a days because employers don't want to hire someone who is more educated and experienced as them ! I know someone who has a master's degree and was told over and over that they were too qualified for a job, so they ended editing thier resume and just took their master's degree right off their resume. It's not lying or unethical unless the employer specifically askes you "what is your highest level of education".
